What to do with leftover potatoes?

I did a chicken in the crockpot with chunked up potatoes (skins on) for Sunday. I have a lot of the cooked potatoes leftover. They are tasty...cooked in chicken broth, but they didn't get the kid wow factor. Any ideas for reusing them?
