What ingredient gives ice cream its specific texture?

I have an ice cream maker, a little small bucket with a spinning spatula thing, a slow-powered frozen mixer pretty much. i used milk, some sugar, and vanilla extract to make some ice cream. however it did not come out like ice cream. the texture is that of dry, flakey mashed potatoes, and the taste and texture in the mouth is that of a weak icee.
